Sensory-directed flavor analysis of key odorants compounds development of French fries and oils in the break-in,optimum and degrading frying stage 被引量:6

The flavor is a decisive sensory characteristic that determines the popularity of French fries(FFs).During high-oleic rapeseed oil(RO)frying,the flavor development of FFs showed three noticeable stages including break-in(3.5%-7.5%of total polar compounds(TPC)),optimum(7.5%-22.18%of TPC),and degrading stages(above 22.18%of TPC).Further,in order to distinguish the key aroma compounds in each stage,the FFs prepared in RO at TPC of 3.5%(FF4),14.5%(FF15),and 26.96%(FF27)and their relevant oils(RO4,RO15,RO27)were selected for sensory-directed analysis.The results revealed that the FF4 had low contents of(E,E)-2,4-decadienal(deep-fried odor)which also caused lower sensory score in FF4 sample.The higher contents of(E,E)-2,4-decadienal in FF15 induced its higher deep-fried odor.The FF27 had higher hexanoic acid(sweaty odor),heptanoic acid,nonanoic acid,benzene acetaldehyde(stale odor),and trans-4,5-epoxy-(E)-2-decenal(metallic odor)compared with FF4 and FF15,thus leading to the undesirable flavor of FF27.Moreover,the decrease of 2,5-dimethylpyrazine and 2-ethyl-6-methyl-pyrazine in FF27 induced the lower roasty flavor,which may also lead to the decline of the sensory score.Similarly,the higher contents of(E)-2-undecenal,hexanoic acid,heptanoic acid,and nonanoic acid in RO27 lead to increase its rancid score and thus lower the sensory score. 展开更多

P omegranate(Punica granatum L.)has attracted considerable attention in world markets due to its valuable nutrients and highly appreciated sensory properties.The aroma profiles of 4 varieties of pomegranate juice,including Dahongtian(DP),Jingpitian(JP),Luyudan(LP),and Tianhonngdan(TP),were investigated via gas chromatography-mass spectrometry(GC-MS)and gas chromatography-olfactometry(GC-O)analyses.A total of 43 volatile compounds were identified by using GC-MS.Among these compounds,16 were considered as potential aroma-active compounds as detected by GC-O.These compounds belonged to the classes of terpinenes,alcohols,and aldehydes.Eleven volatile compounds were defined as the main contributors to the overall aroma of pomegranate juice due to their high odor activity values(OAVs≥1).Aroma recombination and omission tests confirmed thatβ-myrcene,1-hexanol,and(Z)-3-hexen-1-ol were the key aroma compounds,and limonene,1-octen-3-ol,linalool,and hexanal were important aroma-active compounds in DP samples. 展开更多

Non-thermal plasma technology is a new type of odor treatment processing.We deal with H2Sfrom waste gas emission using non-thermal plasma generated by dielectric barrier discharge.On the basis of two criteria,removal efficiency and absolute removal amount,we deeply investigate the changes in electrical parameters and process parameters,and the reaction process of the influence of ozone on H2S gas removal.The experimental results show that H2S removal efficiency is proportional to the voltage,frequency,power,residence time and energy efficiency,while it is inversely proportional to the initial concentration of H2S gas,and ozone concentration.This study lays the foundations of non-thermal plasma technology for further commercial application. 展开更多

黄酒中“焦糖香”特征香气物质葫芦巴内酯的检测及风味贡献研究 被引量:6

采用液液微萃取(liquid-liquid microextraction,LLME)结合气相色谱-质谱联用(gas chromatography-mass spectrometer,GC-MS)技术建立了黄酒中"焦糖香"特征香气物质葫芦巴内酯的快速分析方法。该方法检测限为0.66μg/L,定量限... 采用液液微萃取(liquid-liquid microextraction,LLME)结合气相色谱-质谱联用(gas chromatography-mass spectrometer,GC-MS)技术建立了黄酒中"焦糖香"特征香气物质葫芦巴内酯的快速分析方法。该方法检测限为0.66μg/L,定量限为1.02μg/L,不同类型黄酒中加标回收率在80%~120%之间,当日精密度和隔日精密度相对标准偏差均在10%以内,能够满足黄酒中葫芦巴内酯批量快速检测的需要。采用该方法测定了不同区域24款典型黄酒样品中葫芦巴内酯的含量,结果显示该物质在黄酒中普遍存在,含量在42.05~244.34μg/L之间。首次测定了黄酒基质中葫芦巴内酯的香气阈值(11μg/L),并基于香气活力值(odor activity value,OAV)研究了葫芦巴内酯在黄酒中的风味作用,结果显示所有测定样品中葫芦巴内酯含量均高于其香气阈值,表明该物质对黄酒整体香气具有重要影响。进一步比较分析发现葫芦巴内酯在浙江和上海地区黄酒中含量显著高于其他地区黄酒。 展开更多

The catalytic combustion technology for treating waste gases exiting from wastewater treatment system and oil separators in petrochemical enterprises was introduced in this article. Commercial application of this technology showed that the process "desulfurization and total hydrocarbon concentration homogenizationcatalytic combustion" and the associated WSH-1 combustion catalyst were suitable for treating volatile organic gases emitted from the oil separators, floatation tanks, inlet water-collecting well, waste oil tanks, etc. The commercial unit was equipped with an advanced auto-control system, featuring a simple operation and low energy consumption with good treatment effect. This study aimed to discuss the removal of hydrogen sulfide (H2S) with non-thermal plasma produced by a multilayer tubular dielectric barrier discharge reactor,which is useful in the field of plasma environmental applications.We explored the influence of various factors upon H2S removal efficiency (ηH2S) and energy yield (Ey),such as specific energy density (SED),initial concentration,gas flow velocity and the reactor configuration.The study showed that we can achieve ηH2S of 91% and the best Ey of 3100 mg kWh-1 when we set the SED,gas flow velocity,initial H2S concentration and layers of quartz tubes at 33.2 J 1-1,8.0 m s-1,30 mg m-3 and five layers,correspondingly.The average rate constant for the decomposition of hydrogen sulfide was 0.206 g m-3 s-1.In addition,we also presented the optimized working conditions,byproduct analysis and decomposition mechanism. 展开更多
