硫辛酸的理化性质及抗氧化原理研究进展

摘要 硫辛酸(lipoic acid, LA)是一种天然存在的二硫醇化合物,是一种高效的抗氧化物质,在畜牧业中备受关注并广泛应用。硫辛酸具有独特的理化性质,可溶于水和脂肪溶剂,在体内扮演着辅酶的角色,参与线粒体能量代谢。近年研究发现,硫辛酸通过多种途径发挥抗氧化功能,包括直接清除自由基、再生其他抗氧化剂和修复氧化损伤等,具有提高畜禽抗炎、抗应激和机体免疫力的潜力。文章综述了硫辛酸的理化性质和抗氧化原理,以期促进畜禽养殖业的健康发展。 Lipoic acid is a naturally occurring dithiol compound and a highly efficient antioxidant,attracting significant attention and wide application in animal husbandry.It possesses unique physicochemical proper-ties,being soluble in both water and fat solvents,and plays a role as a coenzyme in mitochondrial energy metabolism.Recent studies have found that lipoic acid exerts its antioxidant function through multiple path-ways,including directly scavenging free radicals,regenerating other antioxidants,and repairing oxidative damage,thereby demonstrating potential in enhancing anti-inflammatory,anti-stress,and immune-modulatory capabilities of livestock and poultry.The article reviewed the physicochemical properties and antioxidant principles of lipoic acid,with the aim of promoting the healthy development of the livestock and poultry breeding industry.
