近红外光谱技术检测巴氏杀菌乳中糠氨酸含量的研究与应用

摘要 [目的]探索近红外光谱技术在巴氏杀菌乳中糠氨酸含量检测的应用。[方法]运用高效液相色谱法(HPLC)与近红外光谱技术联合建模,使用新建模型对巴氏杀菌乳中糠氨酸含量检测进行适用性验证研究。[结果]近红外光谱技术检测用时从27 h缩短至1 min,检测用时缩短26 h 59 min。定标模型相关系数R2为0.96,线性分布优良。[结论]依据相关法规及企业标准,近红外光谱技术与HPLC对糠氨酸含量检测结果具有良好一致性。近红外光谱技术联合建模检测具有检测速度快、操作简便、结果准确的优势。从标准需求、数据准确性、稳定性、时间效率和成本等方面进行评估,本研究结果显示近红外光谱法具有一定的准确性和稳定性,且操作便捷、快速、成本低,可作为巴氏杀菌乳中糠氨酸含量检测的快速有效方法加以推广使用。 [Objective]To explore the application of near-infrared spectroscopy technology in the detection of furosine content in pasteurized milk.[Method]The model was jointly established by high-performance liquid chromatography(HPLC)and near-infrared spectroscopy technology.Applicability validation study on the detection of furosine content in pasteurized milk using a newly created model.[Result]The detection time of near-infrared spectroscopy technology was shortened from 27 hours to 1 minute,reducing the detection time by 26 hours and 59 minutes.The correlation coefficient R²of the calibration model was 0.96,and the linear distribution was excellent.[Conclusion]According to relevant regulations and enterprise standards,the determination results of furosine content by near-infrared spectroscopy and HPLC show good consistency.The combined modeling detection of near-infrared spectroscopy technology has the advantages of fast detection speed,simple operation and accurate results.Evaluated from aspects such as standard requirements,data accuracy,stability,time efficiency and cost,the results of this study showed that near-infrared spectroscopy had certain accuracy and stability,and was convenient,fast and low-cost to operate.It can be popularized as a fast and effective method for the detection of furosine content in pasteurized milk.
