温度对无矾马铃薯湿粉条货架期的影响及其预测模型

摘要 为确定贮藏温度对无矾马铃薯湿粉条货架期的影响,以添加沙蒿胶和聚丙烯酸钠的马铃薯湿粉条为研究对象,分别置于4、10、15、20、25℃条件下贮藏,定期测定样品的菌落总数,同时对其进行感官评价,并联用Gompertz模型和Belehradek方程得出马铃薯湿粉条的货架期预测模型。结果表明:确定了无矾马铃薯湿粉条的货架期预测模型参数分别为N_(max)=6.692(lg(CFU/g))、N_(s)=6(lg(CFU/g))、b_(μ)=0.0294、T_(minμ)=-7.2721、b_(λ)=0.0192、T_(minλ)=-25.2377。通过测定4、15、25℃条件下样品的菌落总数和感官评分随时间的变化趋势,验证了货架期预测模型的准确性,得出4、15、25℃条件下贮藏的样品分别在第25、9、4天时失去商品价值。而通过模型计算出的预测值分别为24.27、8.48、3.65 d,货架期的实测值与预测值的相对误差均小于10%。因此该货架期预测模型可有效预测添加沙蒿胶和聚丙烯酸钠的马铃薯湿粉条在4~25℃范围内的货架期,为企业生产和销售提供了理论指导。 This study aimed to determine the effects of storage temperatures on shelf life of wet potato vermicelli without alum.The wet potato vermicelli with artemisia gum and sodium polyacrylate additions were stored at 4,10,15,20 and 25℃,respectively,and the total number of colonies were measured regularly,and sensory evaluation was conducted.Besides,the shelf life prediction model of wet potato vermicelli was obtained by Gompertz model and Belehradek equation.The results showed that the shelf life prediction model was determined with following parameters:N_(max)=6.692(lg(CFU/g)),N_(s)=6(lg(CFU/g)),b_(μ)=0.0294,T_(minμ)=-7.2721,b_(λ)=0.0192,T_(minλ)=-25.2377,respectively.The accuracy of shelf life prediction model was verified by measuring the variation trends of total numbers of colonies and sensory scores of samples stored at 4,15 and 25℃,and results showed that the samples stored at 4,15 and 25℃lost their commercial values at the 25th,9th and 4th day,respectively.The predicted values calculated by the model were 24.27,8.48 and 3.65 d,respectively,and the relative errors between measured and predicted values were less than 10%.Therefore,the shelf life prediction model can effectively predict the shelf life of wet potato vermicelli with artemisia gum and sodium polyacrylate stored in the range of 4~25℃,which provides theoretical guidance for the production and sales of enterprises.
