摘要
在葡萄酒的生产过程中,过滤是葡萄酒必不可少的工艺处理。而在实际生产过程中,经常会出现堵塞除菌过滤膜的情况。最初酿酒师们通过浊度的高低来判断葡萄酒是否能够堵塞除菌过滤膜,而大量实践证明,浊度值并不能正确反映葡萄酒的过滤难易程度。后来Bowyer等人通过模拟过滤过程中的各种条件,指出可滤性指数(Filterability Index)可在一定程度上模拟葡萄酒的过滤过程,用其指导葡萄酒过滤的意义也更大。
Filtration is indispensable for producing quality grape wine. However, degerming filter membranes are frequently blocked in practice. In the beginning, winemakers judged whether the membranes were blocked or not by turbidity. Then enormous practices proved that turbidity could not reflect the filtration accurately. After that, Bowyer etc. put forward filterability index through the simulation of the conditions in wine filtration, and such index could be used to guide wine filtration.
