摘要
中国作为茶叶的发源地,是发现和利用茶叶最早的国家,也是目前世界上茶类最丰富的国家,素有"茶的故乡"之称。绿茶是新鲜茶叶经过炒、揉、烘等加工方法成形而没有发酵过程的茶品总称。湖南省保靖县黄金茶和云南省双江县冰岛茶,都被普遍认为是绿茶种类中的精品。然而这两个不同区域中的各民族,在栽培、加工、利用茶叶的漫长历史过程中,形成了各具特色的加工工艺和对茶叶的利用方式。其原因在于,这两种茶叶受制于不同的自然生态系统,以及互有差异的地方民族文化,并在茶叶的加工工艺中,呈现较为鲜明的反差。
As the birthplace of tea, China is the earliest country to discover and use the tea. At present, China also has the richest tea in the world. Which is known as "the hometown of tea". Green tee is a kind of tea forming fresh tea after frying, kneading, baking and other processing methods without fermentation. Gold tea from Baojing, Hunan province and Iceland tea from Shuangjiang, Yunan province are generally considered the pithy in the green tea species. However, in the long history of the cultivation, processing and utilization of tea, the nations in the two different regions has formed a unique processing technology and the use of tea. The reason is that these two kinds of tea are subject to different natural ecosystems, as well as different local ethnic culture, and processing of tea is showing a more sharp contrast.
