摘要
我国稻米存在重金属污染安全风险,籼米比粳米风险更大,所以,以籼米为原料的米线也可能存在较大的重金属污染风险。从市场随机收集了20个鲜湿米线样品,利用微波消解、电感耦合等离子体质谱仪对样品中Cd、Pb含量进行了测定,并初步进行了食品安全风险评估。结果表明,市售鲜湿米线样品Cd含量在0.069~0.613mg/kg,超标率为70%,Pb含量在n.d.~0.16mg/kg,超标率为0%;样品中Cd、Pb单污染指数评价表明,米粉Cd处于轻污染水平,Pb为清洁安全水平;但综合污染指数评价结果表明,米线样品为Cd重度污染,Pb含量在清洁安全水平;鲜湿米线中Cd潜在暴露剂量高于USEPA推荐的最大允许摄入量,暴露风险指数为1.27,存在严重健康暴露风险;Pb的暴露风险指数仅为0.01,不存在健康暴露风险。但本研究样本量较少,尚需加大样本量,进一步深入调查评估。
There is more concerned risk of heavy metal contamination in the indica rice than japonica rice in China, thus, the rice noodle processed from indiea rice might has the risk. 20 samples of fresh rice noodle were randomly collected from the market; the cadmium (Cd) and lead (Pb) contents in samples were determined by microwave digestion and inductively coupled plasma mass spectrometry, and the food safety risk was assessed. The content of Cd was in the range of 0. 069-0.613 mg/kg, with exceeding rate of 70%;Pb content was in the range of n. d. ~0.16 mg/kg, none was exceeding the standard. The single pollution index evaluation showed that Cd in rice noodle was light pollution, Pb was clean and safe; however, the comprehensive pollution index evaluation showed that the Cd in rice noodles was severe pollution. The exposure risk index of Cd and Pb in rice noodle was 1.27 and 0.01 ,respectively. Cd in rice noodle was serious health risk exposure. However, the number of samples was very less in the present paper, it is necessary to increase the sample number, and perform further in-depth investigation and assessment.
