摘要
以乌鸡为原料,研究乌鸡黑色素的提取工艺及其对羟自由基的清除效果。利用响应面分析法优化其提取工艺,并分析乌鸡黑色素对·OH清除能力。乌鸡黑色素最佳工艺条件为酶解温度为66.9℃,加酶量为3.9%,酶解时间为12.8 h,pH为5.4。同时,乌鸡黑色素对·OH有较强清除能力,随着乌鸡黑色素质量浓度的增加,其清除能力逐渐增强,明显高于对照组VC。
Discuss the extraction technology by response surface methodology and scavenging activity to hydroxy radical of melanin from black silky. The optimum extraction conditions of melanin from black silky were determined, such as enzymatic hydrolysis temperature was 66.9 ℃, amount of enzyme was 3.9%, enzymatic hydrolysis time was 12.8 h, pH was 5.4. The melanin from black silky had strong scavenging ability to .OH, the scavenging ability strengthened gradually with the increasing concentration of melanin from black silky, which was significantly higher than the scavenging ability of VC.
