摘要
为恩施本地特色水果关口葡萄的品质提升提供科学依据,将关口葡萄和市场上畅销的巨峰葡萄、黑玫瑰、红巴拉多、红提进行品质比较。结果表明,外观品质上表现较好的为黑玫瑰和红巴拉多,单粒均超过10.49 g,关口葡萄最小,为4.23 g;内在品质以巨峰葡萄和红巴拉多表现较好。关口葡萄可溶性固形物(15.2%)较适宜,可溶性糖含量(4.10%)稍偏低,可滴定酸、琥珀酸、丙二酸和维生素C含量较高。关口葡萄营养丰富、具有独特的风味,但口感偏酸,品质稍欠缺,可以采用施用硒肥、生长调节剂等措施提高关口葡萄的质量。
In order to provide scientific basis for improving the quality of Enshi local characteristic fruit Guankou grape,the quality components of it was compared with the best-selling Jufeng grape,Black Rose,Red Balado and Red Globe grape in the market.The results showed that single grain weight of Black Rose and Red Balado were more than 10.49 g,and Guankou grape was 4.23 g.The internal quality of Jufeng grape and Red Balado were better.The content of soluble solid was suitable and soluble sugar was slightly lower,the contents of titratable acid,succinic acid,malonic acid and vitamin C were higher of Guankou grape.Guankou grape was rich in nutrition and had unique flavor,but it tasted sour and lacked quality.Some measures such as applying selenium fertilizer and growth regulator can be used to improve the quality of Guankou grape.
