不同采收期藜麦苗营养成分分析 被引量:12

Nutrient Composition of Quinoa Seedlings in Different Harvesting Stages

摘要 以3个品种的藜麦苗为研究对象,分别对其6个采收期的株高、鲜重、真叶数、含水量、纤维素、总糖、蛋白质、脂肪、维生素C、矿物质、16种氨基酸含量进行研究。旨在阐明藜麦苗的营养价值,探讨不同采收期、不同品种藜麦苗营养成分的差异,确定适合食用的采收期及品种。结果表明:藜麦苗的株高、鲜重、真叶数随着采收期延长而递增,但含水量递减。纤维素含量随着采收期的延长而递增;16种氨基酸含量均在第28,33,38天较高,总量递减;总糖、蛋白质、脂肪、维生素C含量均在第28,38天较高,在第48,53天时较低;矿物质含量的变化与采收期无明显关系。综上,第38天为综合效益较高的采收期;第28天的藜麦苗营养最优,最适食用,但产量低,不建议大批量采收;在第43天以后,特别是第53天营养成分低,纤维素含量最高,不适合采收。与加拿大品种QC5相比,山西的QF3和内蒙的QM1两个品种藜麦苗更适合食用。 The object was quinoa seedling of 3 varieties in 6 harvesting stages.Height,weight and number of leaf,water content and 7 nutritional indexes which contain cellulose,sugar,protein,fat,mineral and amino acids were determined,respectively.The purpose was to clarify the nutritional value of quinoa seedlings,to discuss the differences of nutrient components among 3 kinds of quinoa seedlings in different harvesting stages,and to determine the harvesting time and varieties which were better suitable for consumption.The results show that:along with the prolonging of harvesting stages,weight,height and number of leaf increased,but water content decreased.The content of cellulose increased;16 kinds of amino acids were higher on the 28 th,33 rd and 38 th days,and the total decreased.The contents of total sugar,protein,fat,Vc were higher on the 28 th and 38 th days,and lower on the 48 th and 53 rd days.There was no significant relationship between changes of mineralcontent and harvesting stages.In summary,the 38 th day was the harvesting stage with higher comprehensive benefit.On the 28 th day,quinoa seedling was the best in nutrition and the most suitable for consumption,but it is not recommended to harvest in large quantities because of the low output.After 43 days,especially on the 53 rd day,the content of nutrients was low and that of cellulose was the highest,so it is not suitable for harvesting.Compared with QC5 in Canada,QF3 in Shanxi and QM1 in Inner Mongolia were more suitable for consumption.
