拜城油鸡肌内脂肪沉积规律及其与肉品质的关联性分析 被引量:8

摘要 为研究拜城油鸡肌内脂肪沉积规律及其与肉品质的关联性,试验选用250只1日龄拜城油鸡作为试验动物于相同饲粮和环境下进行饲养,分别于3、7、12、16周龄取其胸肌和腿肌,对肉品质与肌内脂肪含量进行测定。结果显示:随着周龄增加,肌内脂肪含量不断增加;16周龄胸腿肌肌内脂肪含量最高,且与3、7周龄间的差异达到显著水平(P<0.05)。不同部位肌内脂肪相关分析可知,腿肌肌内脂肪含量与蒸煮损失呈正相关,其中与周龄、剪切力呈极显著正相关(P<0.01),与滴水损失、肉色呈现负相关(P<0.05);胸肌肌内脂肪含量与肉色呈正相关,与周龄、剪切力呈极显著正相关(P<0.01),与滴水损失、蒸煮损失和p H值呈负相关(P>0.05)。结果表明,拜城油鸡肌内脂肪含量随着周龄的增加呈现上升趋势,肌内脂肪含量对肌肉的剪切力有显著影响。 In order to analyze the deposition rule of intramuscular fat of Baicheng You chicken and its correlation with meat quality, 250 one-day-age Baicheng You chickens were selected to feed with the same diet and under the same environment, then breast muscle and leg muscle at 3, 7 , 12 and 16 weeks of age were used to measure meat quality and intramuscular fat content. The results showed that with the increase of age, intramuscular fat content was continually increased and reached the highest at 16 weeks of age, and there was remarkably difference between 3 and 7 weeks of age (P〈0.05). The related analysis of intramuscular fat of different parts showed that intramuscular fat content of leg muscle was positively correlated with cooking loss, and which was positively correlated with age and shear force (P〈0.O1), negatively correlated with drip loss and meat color, while intramuscular fat content of breast muscle was positively related with meat color, and which was positively related with age and shear force (P〈0.01)and negative correlation with drip loss, cooking loss and pH value (P〉0.05). It's suggested that with the increase of age, intramuscular fat content was increased and had a significant effect on shear force of muscle.
